Baked Eggplant Patties


RECIPE - Baked Eggplant Patties The Vegetarian Librarian www.veglib.com 1 large eggplant 1 cup olive oil (approximately) 1 cup breadcrumbs 1/2 tsp sea salt + 1 Tbs 1/4 tsp garlic powder fresh ground pepper Peel eggplant in stripes longways, leaving some of the skin on. Remove ends and cut in 1" slices. Place slices in a strainer, cover with about a tablespoon of sea salt and let drain for about a half hour to remove bitterness. Preheat oven to 400 degrees. In a shallow bowl, combine breadcrumbs, 1/2 tsp salt and spices. Place eggplant slice in breadcrumb mixture, cover evenly and tap off any extra breading. Place on a well oiled cookie sheet. Repeat until all are covered with breading. Drizzle with olive oil and bake for 15 minutes. Remove pan from oven, flip patties, drizzle with a little more oil and bake for another 15 minutes. If slices still aren't crisp to your liking, flip the patties again and bake for another 5 minutes. Great with pasta or for sandwiches!

Gaji namul is a sidedish made with eggplants. It's a very traditional Korean vegetarian dish. Hope you like it! Full recipe: www.maangchi.com Ingredients: 3 medium sized Asian eggplant, 2½ tbs soy sauce, 1 chopped green onion, 2 cloves of garlic, ½ tbs of roasted sesame seeds, ½ tbs of sesame oil, 1 ts of hot pepper flakes 1. Cut 3 medium sized Asian eggplants into 2 or 3 pieces. Then cut each piece in half lengthwise 2. Pour 2 cups of water into a steamer, and place the pieces of eggplant inside. Bring to a boil for 15 minutes over high heat. 3. Turn the heat off and move the cooked eggplant to a bowl. Set it aside to cool down. 4. After the eggplant has cooled, drain the liquid from the bottom of the bowl. 5. Tear each piece of eggplant lengthwise with your fingers, and put the strips into a large bowl. 6. Add these seasonings to the bowl: 2 cloves of minced garlic, 1 ts of hot pepper flakes, 1 chopped green onion, ½ tbs sesame seeds, 2½ tbs soy sauce, and ½ tbs sesame oil. 7. Mix it all together with your hand. Serve with rice as a side dish.

Miso simmered eggplant is pretty popular dish in Japan. I arranged it for Halloween, so I hope you like it! Without a question, it goes great with white rice!!! --------------------------------- Miso Simmered Eggplant Witch Difficulty: Medium Time: 30min Number of servings: 4 Ingredients: 4 eggplants (5-6 inches long) A * 200cc dashi broth (using packaged dashi powder saves time) * 1 tbsp. mirin (sweet sake) * 1 tbsp. sake * 1/2 tbsp. sugar B * 1 tbsp. red miso * 2 tbsp. white miso 4 star-shaped thick carrot slices Directions: 1. Make "Chasen Nasu" and soak in water to remove the oxalic acid. The procedure for "Chasen Nasu" is HERE: createeathappy.blogspot.com 2. Heat A in a deep pot, dilute miso in 1/2 cup soup broth, add Chasen Nasu and carrot slices, then cover with Otoshi Buta (drop-lid) and cook on low heat for 10 minutes. Eggplant growing. 1st Chapter (Aubergine)


The aubergine is a vegetable that belongs to the solanaceous or potato family, and which is known scientifically as Solanum melongena. It is an herbaceous plant although the stems, with their lignified woody tissue tend to make it resemble a small tree or bush. It is cultivated as an annual. The aubergine plant possesses a very strong deep root system. The stems are strong, hairy and thorny with a determined growth rate when referring to creeping shoots or an indefinite growth rate when talking about straight, erect stems. The main stem includes short internodes which fork out into secondary stems, which then divide at the leaf axils. The leaves are positioned alternately along the stem. They have a long stalk and are large, complete and oval in shape with thorny nerves. The underneath part of the leaves are covered with a greyish down. The flowers tend to droop and can appear either by themselves or in clusters of 3 to 5 flowers. They possess between 5 and 7 green sepals and the same number of elongated violet petals. The stamens have highly developed anthers which are yellow in colour and are situated under the stigma, which makes direct fertilization difficult. The fruit is an egg-shaped or bulbous berry which is black, purple, white or white-tinged purple or green with small yellow seeds.
