The dairy cow normally has her first calf at the age of two when she will be producing around 35 litres of milk a day. In subsequent lactations this figure rises even higher. She will continue to be milked for 10 months - but will be made pregnant again in the third month. Professor John Webster, Department of Animal Husbandry, Bristol University says: "The dairy cow is a supreme example of an overworked mother. She is the hardest working of all our farm animals and it can be scientifically calculated. It is equivalent to a jogger who goes out for six to eight hours a day which is a lunatic pursuit. He states that almost 100 per cent of cows suffer from laminitis - a disease which causes 'great pain to the cow' (MAFF). Tissue lining of the foot becomes inflamed and may lead to ulcers. Professor Webster continues: "To understand the pain of laminitis it helps to imagine crushing your finger nails in the door then standing on your fingertips."

Swiss cows produce the milk used to make the world's finest chocolate. Why Swiss cows are so good at this has never been fully explained., at least until now. I suspect that the secret is revealed by the big bells that adorn Swiss cows, for you will never see a cow more contented than a Swiss one. At least I have not. Their music has no composers or conductors. Thus, it possesses a unique melodious quality all of its own that far outshines the noise generated by an army of wind chimes. Because no sequence of notes is ever repeated, human admirers of Swiss cow bell choirs find their timeless music especially alluring and almost hypnotic. And so do the cows, for they are so curious to hear the sound that will emerge next that they play their bells all day long, stopping only to nap or to stare at a stranger who intrudes on their performance unannounced. Surely the flavor and texture of the world's best chocolate is due entirely to those bells that adorn Swiss cows, such as those that I recently visited on a fine October day near Lausanne. The performance was so superb that I wanted to applaud and cheer. But the cows never stopped playing long enough. Their melodies did not fade away until I had hiked more than half a mile. That's when I remembered the Swiss chocolate in my pocket. The delicacy quickened my pace and even brought back the sound of cow bells.
